Chef Andrea Carlson

Chef and Owner Burdock & Co Restaurant and Harvest Community Foods.

Andrea is a graduate of the Dubrulle Culinary School, where she honed her culinary skills under Executive Chef Rob Clark at C Restaurant, first as a pastry chef and later as Sous Chef. From C, she moved to Victoria to work at the Sooke Harbour House with its famed edible landscape. Andrea Carlson has garnered the Prestigious Green Award from Vancouver Magazine. When she was at Raincity Grill, she was the first chef in town to feature a 100-mile menu; she has worked as the Executive Chef at Bishops Restaurant, as well she helped launch the city’s compost program by composting with the mayor.

Owner of Chilcotin Harvest and Pasture to Plate

The abattoir and butchery component of Pasture to Plate, B.C.’s first vertically-integrated organic grass-fed meat operation. The pond and patio are frontage for Kinikinik, the general store and restaurant sells and serves meat from Rafter 25 Ranch, which has been owned and operated by Felix and Jasmin Schellenberg since 1979.

Peter Ladner

Former City Councillor, Author of The Urban Food Revolution

Peter Ladner is author of The Urban Food Revolution: Changing the Way We Feed Cities. He is a former Vancouver city councilor, Metro Vancouver vice-chair and business owner. He is currently a weekly columnist at Business in Vancouver newspaper, which he co-founded in 1989. He also writes for Seattle-based crosscut.com. He blogs at Urbanfoodrevolution.com.

From 2009-2011 he was a fellow at the SFU Centre for Dialogue researching, teaching and organizing public events around the theme Planning Cities as if Food Matters. He has grown food in his own gardens for 35 years, most recently on what used to be his front lawn. As a city councilor, he worked with the Vancouver Food Policy Council in initiating the city’s program to add 2010 food-producing community garden plots by 2010.

Peter has more than 40 years of journalistic experience in print, radio and television and is a frequent speaker on food, business and community issues. He has a BA from UBC and completed a year of graduate studies at the UBC School of Regional and Community Planning.

Susan Davidson, of Glorious Organics Co-op ( http://www.gloriousorganics.com) in Aldergrove, is an organic farmer and passionate eater of all things local. She has been active with the Vancouver Farmers Markets for fourteen years  as a vendor and on the Board and Vendors Advisory Committee.  She is devoted to helping grow  a thriving  Farmers Market  in Langley.

This is the eigth event in this Food Talks series which will celebrate its first year of hosting inspiring speakers from our community. Come join us to meet and mingle with other foodies, and to hear some enlightening women chefs as our speakers.

Karen Barnaby

Karen Barnaby started cooking at the age of eight and has not been able to stop. Her professional career started twelve years later on a pink, four-burner electric stove in the basement of The Bohemian Café in Ottawa where she baked carrot cakes, cheesecakes, quiches and other culinary marvels of the late 1970’s.

Karen has lived and worked in Toronto at The Rivoli and the David Wood Food Shop, and in Mexico as a private chef. Vancouver has been her home since 1991 where she has held the position of Executive Chef at the Raintree Restaurant and the Fish House in Stanley Park.  Her current role is as Chef of Product and Business Development for Albion Fisheries, Intercity Packers, and Fresh Start Foods under the Gordon Food Service umbrella.

With her no-nonsense and approachable style, Karen is a well-respected cooking teacher, speaker and inspirational role model. She is the only female chef to be honored with the British Columbia Restaurant and Foodservices Association Back of the House Award for Excellence and has received a Minerva Award for Community Leadership.

Karen has written and edited award-winning cookbooks, contributed recipes to numerous publications and writes a popular column for the Vancouver Sun.

As a volunteer, she has edited the Helping Hands Cookbook, written to support Vancouver’s Community Kitchens Project, sat on the board of The Greater Vancouver Food Bank, and was the Scholarship Director and past president of Les Dames d’Escoffier Vancouver Chapter. Karen looks after her neighborhood first and lends her skills to various services in the DTES.

 

Meeru Dhalwala

Meeru Dhalwala was born in India and moved to Washington, DC, at a very young age with her parents. In DC, she worked with various international non-profit organizations on human rights and economic development projects. She received her Master’s degree in Development Studies from Bath University in England. In 1995 Meeru moved to Vancouver and joined her husband, Vikram, to work at his newly opened restaurant, Vij’s. She quickly took over the menu responsibilities and has been creating new recipes since the summer of 1995.

In 2002, Meeru and Vikram opened up a second restaurant and market called Rangoli. Meeru continues to work closely with her all-female kitchen staff – all of whom hail from villages in the Punjab – to experiment with various cooking techniques and spice combinations. In addition to her responsibility for the recipes at Vij’s and Rangoli, she is also responsible for their packaged gourmet curries, which are sold at Rangoli and many gourmet markets across Canada.

Meeru’s particular interest and focus at Vij’s and Rangoli is to forge business relationships with other local businesses and farmers. She is committed to improving her business environmental footprint. In 2009, Meeru signed up Vij’s to join local CSA (community supported agriculture) farms and has started long-term business relationships with various BC farmers. Meeru’s special community project is an annual international food fair called “Joy of Feeding” that is held every summer in Vancouver. Joy of Feeding features 15 – 16 home cooks of various ethnic backgrounds and professions showcasing their family favorite comfort foods.  This event is held at UBC Farm and is also a fundraiser for the farm.

Meeru and Vikram have penned two cookbooks: Vij’s: Elegant and Inspired Indian Cuisine, which won Cuisine Canada’s 2007 Gold Award for Best Cookbook, and Vij’s at Home: Relax, Honey. Meeru also wrote a regular monthly column called Food for Thought for the Vancouver Sun for over a year and was a regular Point Person for CBC radio’s 2009 national show The Point. In November 2012, Meeru opened a new restaurant called Shanik, in Seattle, Washington in partnership with Oguz Istif, who is also involved in heading finance and operations for the Vij’s companies in Vancouver.

 

Susan Mendelson

Susan Mendelson co-founded the Lazy Gourmet in 1979 and her catering company has been going strong ever since, she loved working with people and loved cooking. Her first cookbook started with the concept of simplifying classical recipes for people who wanted gourmet food but who were to “lazy” to follow all of the complicated steps, it’s title, “Mama Never Cooked Like This” in 1980. Susan has also written, “Let me in the Kitchen” in 1982, “Nuts about Chocolate” in 1983, “Fresh Tarts” in 1985, “Expo ‘86 Souvenir Cookbook” in 1986, “Still Nuts about Chocolate” in 1992, “Food to Grow on” in 1994, “The Lazy Gourmet Cookbook” in 2000. Over 30 years later Susan Mendelson released her newest and magnificently orchestrated group of recipes in “Mama Now Cooks Like This” in 2006.

Over the years she has shared her recipes on radio, television and in the ten cookbooks. It’s been over 30 years and Susan still feels passionate about delicious and beautiful food and believes that only the finest ingredients should go into any food that is created. Susan has supported many organizations over the years with donating a percentage of royalties of her books including Big Sisters of BC along with the Vancouver Jewish Family Service Agency Food programs.

 

Angie Quaale

Angie Quaale founded Well Seasoned in 2004 after working for several years in hotels & fine dining and a career in commercial food sales specializing in menu development and retail food distribution.

Angie is also the Head Cook/Pitmaster of her competition BBQ Team which has traveled all over North America competing in BBQ contests.  Angie has been the President of the BC chapter of Les Dames d’Escoffier, a Board Member of the Pacific Northwest BBQ Association and the 1st Vice President of the Greater Langley Chamber of Commerce, the Co-Chair & a founding board member of the Langley Community Farmers Market &  has also been recognized by Women’s Enterprise Centre as one of BC’s 100 New Pioneer Women Entrepreneurs 2008.  In 2006 Angie was recognized by the Greater Langley Chamber of Commerce as the Entrepreneur of the Year and in 2007 as the Small Business of the Year.   Angie LOVES the work she has the opportunity to do everyday and the fantastic people she gets to do it with.

 

Merri Schwartz

Merri Schwartz credits her childhood with awakening her interest in baking. Raised by back-to-the-land hippies, she didn’t buy her first bag of granulated sugar until the age of 18. She learned in a kitchen filled with carob, honey, and whole wheat flour that everything could and should be homemade. A whirlwind pastry career later, Schwartz has been lucky enough to serve as pastry chef at some of BC’s best restaurants since 2002, including King Pacific Lodge, C Restaurant, Quattro on Fourth, Raincity Grill, The Granville Island Hotel, and Cocoa West Organic Chocolatier, as well as training at the Valrhona Chocolate Institute, outside of Lyon, France.

The same passion for food and agriculture led Schwartz to found Growing Chefs! Chefs for Children’s Urban Agriculture in 2005. This Vancouver-based, non-profit organization pairs chef volunteers with elementary school classrooms, where the chefs help the students plant, grow and cook their own vegetables. Schwartz founded Growing Chefs! with the hope that sustainable practices will become integral to living and cooking in Vancouver, and in cities like it all over the world. After acting as the executive director of Growing Chefs! for four and a half years, Schwartz joined the board of directors as the chair in 2010.

Mark Simpson is the Winemaker and Brewmaster at Artisan Food and Beverage Group Inc. which he founded. Mark has decades of experience in brewing and winemaking. He has had a keen interest in fermentation since graduating from the UBC Microbiology program in 1982. He started his career with Molson Breweries, working with their core brands, as well as brewing international brands under license such as: Lowenbrau, Coors and Kirin and a ten year stint as Brewmaster for Granville Island Brewing Company.

Mark wears many hats, he is currently Brewmaster of Dockside Brewing Company and produces his own line of super-premium BC wines under his own Siren’s Call label. Mark is one of the few Certified Cicerones in Canada and has a keen interest in beer culture and food pairing for beer.

Julia Smith owns and operates Urban Digs Farm. Urban Digs is a family farm that grew out of a quarter acre residential lot on Vancouver’s West Side and now encompasses several acres of in South Burnaby, Richmond and Delta. As an active member of Vancouver’s Urban Farming Society and a founding director of Metro Vancouver City Farms Coop, Julia is well connected to the local farming community. Urban Digs distributes weekly harvest boxes, participates in farmers markets, supplies a number of local restaurants and will be opening for farm gate sales at their Burnaby location in the spring. Like many new farmers today, Julia does not come from a farming background and relies on passion, enthusiasm and a supportive community to propel her up the steep learning curve.

John Bishop’s love for cooking began when he was a child growing up in Newton Powys, Wales. Starting out by helping in his mother’s kitchen to eventually as a young man learning the formal requirements of traditional French food preparation at a hotel school. After working as a chef in Great Britain, John moved to Vancouver in 1973.

John began his career in Vancouver with local restaurateur Umberto Menghi – first as head chef then eventually becoming Maitre’d. At the urging of friends and investors during the recession of 1985, John opened Bishop’s. Since then, Bishop’s has consistently been one of the city’s top restaurants. Annually the restaurant receives top grades from local as well as all the respected North American guides.

John has authored four cookbooks with Douglas & McIntyre: Bishop’s, Cooking at My House, Fresh and Simply Bishop’s.

Daniel Frankel

Daniel Frankel is the President & CEO of the Daniel Group, a Vancouver based hospitality organization. Mr. Frankel’s restaurants include, the Prospect Point Café & Gift Shop, Stanley Park Pavilion, Stanley’s Park Bar & Grill, The Mill Marine Bistro, Burrard Bridge Bar and Grill (also known as the Pirate Pub), Tap & Barrel in the Olympic Village and another upcoming Tap & Barrel at the new Vancouver Trade & Convention Centre.

Daniel has been in the hospitality business since the young age of 14 when he opened his first mobile ice cream cart. It was this early successful experience that gave him his passion for the hospitality industry. After graduating from the University of Western Ontario in 1997, followed by short stint in the entertainment business, Daniel opened a small coffee shop that was to become the beginning of his hospitality company which today consists of six operations, and growing.

In 2012, Mr. Frankel introduced a new concept with Tap & Barrel opening in the former Olympic Village in False Creek. Tap & Barrel is a 500-seat restaurant and bar focusing on BC beer and wine on tap. Mr. Frankel is also presently developing new restaurant locations, which will be part of the Tap & Barrel brand.

Kalpna Solanki

Founder of Martin’s Marvelous Naturals

Kalpna Solanki launched the first frozen organic baby meals company BOBOBABY in North America in 2005. When the economic downturn impacted her business and new opportunities presented themselves, she sold the BOBOBABY brand and started working on Martin’s Marvelous Naturals. Her company produces a line of high-end gourmet Crisps and Granola that are all made in her own manufacturing facility in Burnaby, BC. All the products are gluten-free, nut-free and all-natural, and 90% of ingredients are from Canadian sources.

An avid entrepreneur, Solanki saw the huge potential in doing business beyond borders. Within a few months of launching the new brand, she started exporting to the US. Currently, she is in the midst of negotiating the export of her products to new markets.

Hamid Attie

Hamid Attie has been working as a freelance photographer in the Vancouver area since 1994 and is one of Vancouver’s premier food and restaurant photographers. His talent, versatility and creativity have allowed him to excel in a variety of photographic disciplines and he is known for his innovative use of light.

Specializing in the food and restaurant industry, Hamid has enjoyed working with many of Vancouver’s finest chefs and restaurateurs. Recent cookbooks include C Restaurant’s ” C Food “, Quattro Restaurants’ ” Quattro “, Caren Mc Sherry’s ” In a Pinch “, Provence Restaurants’ ” Provence “, Bin 941’s ” Tongue Twisters “, as well as a pair of cookbooks for the British Columbia Chefs Association.

His work has been published in numerous local and national magazines. Hamid loves being a photographer.

Isabelle Ranger

Isabelle Ranger stays rooted to her craft with Thérroir Tisanes™ growing in Pemberton, B.C. & TeaCrafting the world’s finest Single Origin Import Teas in Whistler,B.C. Her love of Herbalism began as a child & in 1993 after moving from Ottawa, ON to ride Whistler,  she fell in love with the lush foraging bounty of the WestCoast. She studied Herbalism with reknowned Medical Herbalist Rowan Hamilton & Shamanic Herbalist Don Ollsin at Langara College in 1998. Isabelle & Don discussed plans to found a Herbalism Farm School on Saltspring Island where Isabelle would craft medicinals for the apothecary & Don would continue teaching. Plans changed quickly & almost evolved into an Herbal Apothecary on Main street in Vancouver but a calling to go back up north on the reserve in Mt.Currie was the chosen path.

Isabelle founded a co-op style Herbal Dispensary & Clinic with Organic Juice Bar called The Herbal Emporium where a variety of Healing Arts would be offered affordably to the surrounding communities in 2000. She basically set-up shop to learn & share her love of Herbs in the most ancient, simple, affordable & healing form : Tea. Isabelle also made botanicals extracts for years macerating wildcrafted concoctions with her BC grain alcohol license in both Mt. Currie & Whistler, B.C. During this time Isabelle met her life & business partner Cédric. This is where she honed her Teacrafting skills by making totally unpalatable bitter & astringent roots into wonderful healing teas loved by her local & international clients. Since her family was living in Asia for many years she started plans to import direct trade teas, handcrafted ceramic teapots & silks for her shop with her first shipment of Ancient Tree Teas arriving from Vietnam in 2004.

Isabelle felt the foodservice & grocery was in need of amazing Thérroir Tisanes™ crafted in BC with the finest import Single Origin & Fair-Trade Teas. She founded Namasthé in 2006 to grow organically, craft  & serve BC’s finest establishments, organic grocers & cafés. The focus would be on what grows here in BC & hand blend in micro mélanges with Heirloom varietals of Teas from around the globe. Isabelle likes to bushwack for exotic botanicals right in her backyard, weed all summer on the farm & TeaCraft on demand the freshest Thérroir Teas for her growing list of clients.

The evening started off with guests mingling over a glass of Ok Crush Pad wine inside the Vancouver Urban Winery. Guests were treated to delicious canapés prepared by Chef Julian Bond and his talented crew of student chefs from the Pacific Institute of Culinary Arts.

Food Talks Volume 4, October 23

This is the fourth event in this Food Talks series! Come join us to meet and mingle with other foodies, and to hear some enlightening speakers from the food community.

Emad is no stranger to the kitchen. He spent the early years of his career honing his craft as Executive Chef in several celebrated Toronto restaurants. Later, he was the driving force behind the re-invigoration of Vancouver’s Joe Fortes. It was at Fortes that Emad met his future wife, Shannon, who was managing that restaurant’s busy dining room at the time, while Emad worked away as Executive Chef in the high-volume kitchen.

After spending several years in B.C.’s restaurant industry, Emad and Shannon decided it was time to make their own move – to realize their own vision of what a restaurant could be. Toronto’s Solo on Yonge St. and Brownstone Bistro were their first successes. Emad’s culinary mastery and Shannon’s vast experience with public relations and management led them to rave reviews in Toronto’s restaurant scene.

Today, the GLOWBAL COLLECTION is comprised of eight restaurants: glowbal grill steaks & satay, COAST Restaurant, Italian Kitchen, Trattoria Italian Kitchen, SOCIETY, Black+Blue, two IK2GO locations; and two lounges: AFTERglow and O Lounge. A ninth restaurant will open on Granville Street (in the former Sanafir location), along with the city’s largest patio at Black+Blue, later this fall.

Steve Thorp and Mike Macquisten co-founded the Vancouver Urban Winery in 2012. The 7,700 square foot urban winery is the first of its kind in Vancouver and also operates as a unique special events space. The winery features 36 wine taps at the tasting bar where consumers can learn about British Columbia wines, and the exploding wine-on-tap category. Alongside the tasting bar sits a boutique wine shop full of local items, wine merchandise, artisan foods and beverage and plenty of wine! The winery manufactures, packages, imports and distributes wine for multiple brands. The operations of FreshTAP, which specialize in packaging quality wines in stainless steel kegs for the emerging wine-on-tap category takes place within the Vancouver Urban Winery.

Greg Hook is recognized as one of Vancouver’s earliest gourmet chocolatiers. After studying cooking in London, England and the intricacies of chocolate at Callebaut College in Belgium and the Ecole du Grand Chocolat in France, Greg Hook opened his Kitsilano shop Chocolate Arts in 1989. To this day, Chocolate Arts is devoted to creating unique chocolate products emphasizing local and organically grown ingredients. At the shop, small batches of artisanal chocolates are created each day using the best raw chocolate from producers in Belgium and France, many of which are single origin chocolates. Fillings never include colourings, additives, or artificial flavours and all purees, concentrates, essences, most dried fruits and flavoured alcohols are house-made. Natural west coast flavours like wild blackberries, raspberries, cranberries, blueberries, hazelnuts and pears are some of delicious temptations found at Chocolate Art.

Lesley Stowe

Lesley Stowe

Lesley Stowe is a Parisian-trained chef who began her own catering company more than 20 years ago in Vancouver. Frustrated by the lack of specialty foods in the city, she opened lesley stowe fine foods, offering customers a wide-range and global selection of cheeses, vinegars, oils, breads, house-made entrees, dips, preserves, desserts and hard-to-find grocery items. In 1990, Lesley started selling her delectable dessert creations to the city’s top restaurants and became known for her decadent “Death By Chocolate” confection. The store’s success, combined with Lesley’s ability to predict and capitalize on food trends resulted in the creation of raincoast crisps – a revolutionary snack food beyond compare.

The author of her own cookbook, the lesley stowe fine foods cookbook, Lesley has also contributed to other popular cookbooks including The Girls Who Dish series.

Pete Schouten has been in the farming industry for as long as he can remember. Born in Cloverdale, BC, Pete grew up surrounded by the province’s natural beauty and a local culture focused on clean living through healthy lifestyle choices. In 1993, Pete saw an opportunity to invest into Heppell’s Potato Corp. With years of experience under his belt, he developed a plan for the company. After presenting it to the bank and the Heppell family, his passion won them all over, which eventually lead to the third generation farming family to transfer half of the company into Pete’s care.

Pete’s future plans for Heppell’s Farms and Hardbite will take the companies to a national level. He plans to have a nationwide presence that will provide local produce and goods everywhere. His dream is to have a farm in each province with national marketing as well as purchasing power, creating a unique and efficient value chain from the field to the customer, developing a knowledge network of information to connect the customers to the growers.

We’re not only farmers, we’re artists, scientists and big time outdoor enthusiasts. As fourth generation potato farmers, we know it takes more than just potatoes to produce the perfect chip. Braden Douglas is a seasoned marketer who has fused a service-focused approach with strategic creative thinking to form the backbone of Relevention Marketing Inc. – an innovative full service, results-based marketing agency located in the Lower Mainland’s city in the country; Abbotsford, BC.

Hailing from the small town of Fonthill, Ontario (just 20-minutes outside of Niagara Falls), Braden attended Wilfred Laurier University where he received a degree in Business and Economics. It was during his time at university that Braden discovered his natural intuitions and passion for marketing, leading him to become the youngest person hired in the marketing departments at both Procter and Gamble and Frito Lay. In 2004, after enriching stints at these two brand giants, Braden’s personal faith and vision to revolutionize non-profit marketing inspired him to found the Marketing and Communications department at one of Canada’s most recognized non-profit ministries, Power to Change, formerly Campus Crusade for Christ, Canada.

In 2007, prompted by a desire to enable companies and organizations to achieve unprecedented growth, Braden resigned from his position as director of Marketing and Communications at Power to Change to follow a dream. In September 2007, Relevention Marketing Inc., a company dedicated to providing strategic marketing plans, creative solutions and practical advice to medium-sized businesses and non-profit organizations, opened its doors for business.
